Italy born in 1861, is a young country.  Before 1861, it was divided into a lot of independent states.  Borders between the states were mutable, every 50 years the borders changed.  These changes were very important for culture and wine, because every city had different history and different food.  But the negative part of this, is the impossibility to team up people in Italy.

Italy has around 3000 different types of vine, making Italy one of the richest vine biodiversity country in the world.  It is very difficult to know all Italian wines.  Italy is surrounded by sea and has two mountain ranges.  The terrain influence the quality of wine and provide diversity of flavors to the wine.

ORGANIC SYMBOL

Organic wine.  It is an important topic protecting environment as well as for people who want biologically cultivated grapes for natural wine.  Organic wines could change significantly every year following natural changing cycle of weather.  During dry year the wine could be sweeter, stronger in colour and variable alcohol graduation compared to say a cold year wine.


     

AUTOCHTHONOUS YEAST

Wine is very complex affected by the sun, water, weather, the type of grapes, the aging process... but one of the most important element that is often underestimated for its impact on the wine is yeasts.  In fact, the yeasts are fundamental in the creation of the bouquet of the wine.  So if the yeasts are autochthonous of the cellar and not bought in, that wine has a unique bouquet.
